This means the mollusk has created a bottom shell and a matching top shell, joined together by a ligament.You will receive the matching top and bottom shell of this bivalve, except where it says the shells are singles. Most scallops have been gathered for centuries as food. The young scallops usually attach themselves to hard objects with their byssus. These, like other scallops prefer offshore sandy or stone filled sea floors. Scallops are found worldwide.

Argopecten purpuratus is an edible marine species of saltwater shellfish, a bivalve mollusk in the family Pectinidae. This pectin is natural to certain bays in the Southern west coast of south America, from Peru to Chile. The pectins can be harvested and commercialized to several markets around the world.
In most growth areas, the harvesting of natural grown pectins has been replaced by aquaculture operations. The aquaculture operations consist in re-stocking the natural areas, taking care of the pectins along the grow out period and harvesting at the end of the cycle. Thanks to these practices, the natural banks have recovered and are able to maintain a sustainable production level.
